Mary's Alaskan Recipes

Mix dry ingredients:
- 1 c. flour
- ½ c. oat or wheat bran or wheat flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- ¼ tsp. salt
Mix wet ingredients:
- 2 eggs
- ¾ c. brown sugar
- ¼ c. olive oil
- 1 tsp. Mexican vanilla
- ¾ c. Granny Smith apple, diced
- ¾ c. Alaskan Lingonberry (cranberry)
- ½ c. chopped nuts
Combine dry and wet ingredients together. Fill greased muffin tins 2/3 full. Bake in preheated 350 degree oven for 20-25 minutes.
- 1 ½ c. brown sugar
- 2/3 c. olive oil
- 1 egg
- 1c. sour milk (milk with 1 tsp. lemon juice)
- 1 tsp. Mexican vanilla
- 1 tsp. baking soda
- 2 ½ c. flour
- 1 ½ c. rhubarb
Combine ingredients in order. Fill greased muffin tins 2/3 full. Bake in preheated 400 degree oven for 20-25 min.
- Mix wet ingredients:
- ½ c. butter
- 1 c. sugar
- 2 eggs
- 1 tsp. Mexican vanilla
- ½ c. milk
Mix dry ingredients:
- 2 c. flour
- 2 tsp. baking powder
- ¼ tsp. salt
Gently blend the wet and dry ingredients together. Fold in 2 ½ c. fresh or frozen Alaskan Blueberries. Sprinkle tops with 1 tbsp. sugar mixed with 1 tsp. nutmeg. Bake in preheated 375 degree oven for 25-30 minutes.
- ½ c. olive oil
- 1 ½ c. sugar
- 1 egg
- 2 c. flour
- 1 tsp. soda dissolved in: 1 c. sour milk (1 c. milk, 1 tsp. vinegar, ½ tsp. cream of tartar)
Stir in 2 c. finely cut rhubarb.
Sprinkle on top and pat in:
- 1/3 c. sugar
- 2 tsp. cinnamon
- 1 c. chopped nuts
Pour into greased 9x13” pan. Bake in preheated 350 degree oven for 45 minutes.
Mix wet ingredients:
- ½ c. butter
- 1 c. sugar
- 2 eggs
- 1 ¼ c. plain or vanilla yogurt
- 1 tsp. Mexican vanilla
- 1 tsp. almond extract
Mix dry ingredients:
- 2 c. flour
- 2 tbsp. poppy seeds
- ½ tsp. salt
- ¼ tsp. baking soda
Gently mix the wet and dry ingredients together. Fill greased muffin tins 2/3 full. Bake in preheated 400 degree oven for 15-20 minutes.
- 1 c. butter

- ¼ c. soy sauce
- 2 cloves minced garlic
- 2 tbsp. mustard (any kind)(yes, that is tablespoons!)
- 2 tsp. ketchup
- 1 tbsp. Worcestershire sauce
Mix in small sauce pan and simmer for 15 min. Use to baste and for a dipping sauce for salmon.
